Yummy Sourdough French Toast with Crunchy Blueberries

BLUEBERRY CRUNCH FRENCH TOAST

Ingredients

4 slices sourdough bread, or gluten free bread

2 large organic, free range eggs

2/3 cup coconut milk

1/2 tsp vanilla

1/2 tsp cinnamon

Whisk eggs with milk, vanilla and cinnamon.

Dip each slice of bread for 10 seconds on each side and then dip each side into the delicious crunch mixture.

Crunch topping ingredients

Combine 1/2 cup super seeds ** see note

1/2 cup unsweetened, shredded coconut shreds and 1/4 cup of finely chopped pecans.

Heat griddle with a light coating of coconut oil (about 1 tablespoon)

Fry on medium-low heat for 3-5 minutes on each side or until lightly browned.

Fresh blueberry sauce

Combine 2 cups fresh organic blueberries with ¼ cup pure maple syrup, ½ tsp cinnamon and ¼ cup water.

Cook over medium - low heat. Stir occasionally until slightly thickened.

Serve over French toast.

** For a no sugar version, replace the maple syrup with ¼ cup of allulose syryp.

**Note: Super seeds Ingredients : Organic Chia Seeds, Organic Flaxseed Meal, Organic Hulled Hemp Seeds

Gluten free, soy free, dairy free.

A great source of omega 3’s, fiber & protein.(can be purchased at Amazon or local grocery stores)
