Rice Alternative

Super Seeds Pudding Bowls


  • 1 can coconut milk (13.66oz)
  • 1/2 cup super seeds
  • 2 tbsp. maple syrup
  • 1/2 tsp. vanilla extract
  • 2 dashes cinnamon 

Optional toppings: 

  • 1 cup granola      
  • Unsweetened coconut shreds
  • 1 banana sliced
  • 1/2 cup  sliced strawberries
  • 1/2 cup blueberries      or blackberries
  • Sliced kiwi

Instructions

  • Whisk coconut milk, maple syrup and vanilla together in a medium bowl. (for sugar free version you      can replace the maple syrup with 1-2 tsp of allulose, monk fruit or      stevia) Adjust to desired sweetness.
  • Add super seeds and mix well. Cover the bowl and let it stand on countertop for 15 minutes. Stir      mixture, cover and refrigerate for 1 hour. 
  • Stir the mixture and refrigerate for another 60 minutes.
  • Divide the pudding between 2-3 serving bowls. Top each bowl with desired options (sliced bananas, sliced strawberries and blueberries, blackberries and granola).

Try different fruit combinations (pineapple, kiwi, blackberries), or maybe add some sliced almonds, chopped pecans, or pistachios.
