SAVORY SPAGHETTI

Savory Spaghetti (Delicious and Nutritious)

Cook pasta according to package directions (choose high protein, gluten free) Brown rice and lentil pasta – delicious and protein packed.

Spaghetti Sauce 

12 ounces healthy spaghetti pasta noodles of choice (lentil or brown rice are great protein options)

¼ cup extra virgin olive oil

1 medium chopped onion

1 medium zucchini, chopped 

2/3 cup sliced, fresh mushrooms

2/3 cup tri-colored bell peppers (red,yellow ,orange) chopped

3 garlic cloves, minced, or 1tbsp (jar prepared)

½ tsp dried Italian herb seasonings

½ tsp turmeric 

½ tsp smoked paprika

½ 6 oz can of tomato paste

1 large can (28 oz) organic crushed tomatoes

2 cups fresh, organic spinach leaves

Salt and fresh ground black pepper

Instructions:

Heat the olive oil in a wide skillet over medium heat. Add onion and cook, stirring occasionally, until browned.

Add the zucchini, peppers, mushrooms and garlic and continue cooking until lightly browned. 

Next add the fresh spinach, spices and seasonings, salt and pepper, along with the crushed tomatoes and tomato paste. 

Cook over medium-low heat 35-45 minutes stirring occasionally.

Serve over prepared pasta and enjoy!
